Easy lunch: Mince and sweetcorn bake

Mince and sweetcorn bake

Serves 4

1 onion, chopped

1 green pepper, chopped

30 ml (2 tablespoons) oil

500 g lean beef mince

Worcestershire sauce, salt and pepper to taste

1 can cream-style sweet corn

2 eggs, beaten

15 ml (1 tablespoon) dried parsley

Preheat the oven to 180°C and grease an ovenproof dish. Fry the onion and green pepper in the oil until soft. Add the mince and fry until golden brown and cooked. Season to taste with the Worcestershire sauce, salt and pepper. Mix the sweetcorn, beaten egg and parsley, and add to the mince. Season to taste with salt and pepper. Pour into the prepared dish and bake for 30 minutes until set. Serve on rice or pap.
