Easy Spekko herb rice

15 ml (1 tablespoon)   olive oil

15 ml (1 tablespoon)   butter

1/2                               onion, chopped

1 – 2                             celery ribs, sliced

125 ml (1/2 cup)          fresh mushrooms, sliced

1/2 teaspoon               salt

1/4 teaspoon               pepper

30 ml (2 tablespoons) mixed fresh herbs such as basil, oregano, parsley, thyme, verbena,

and/ or lemon thyme, finely chopped

15 ml (1 teaspoon)      dried rosemary

250 ml (1 cup)             cooked Spekko Parboiled Long Grain Rice


  1. Heat the oil and butter over medium heat in a large frying pan. Add the onion and fry for 3 minutes.
  2. Add the celery, mushrooms, salt, and pepper. Cook and stir for 1 minute more or until the vegetables are tender. Remove the frying pan from heat. Stir in cooked rice, fresh herbs, and rosemary just until combined.
  3. Mix with the cooked Spekko Rice and serve.
