Fragrant chicken curry

1/3 cup            olive oil

3                      onions, finely chopped

6                      cardamom pods

4                      cinnamon sticks

1 tablespoon    cumin seeds

1, 5 kg             chicken breasts, cubed (or use a chicken budget braai pack with the bone in)

2 x 410 g         cans tomatoes, chopped

2 tablespoons garlic paste

2 tablespoons ginger paste

¼ cup              masala

1 tablespoon    coriander

4                      lime leaves

fresh coriander to serve

  1. In a large saucepan, heat oil and fry the onion, cardamom, cassia and cumin until onion is soft and translucent, and spices are fragrant.

  1. Add chicken and gently stir-fry for about 5 minutes. Add the tomatoes, garlic, ginger, masala, coriander and lime leaves, stirring until chicken is coated.

  1. Reduce the heat and simmer until the chicken is tender. Season with salt and freshly ground pepper. Add coriander and serve with Spekko Parboiled Long Grain Rice.
