French toast ham & cheese sarmies

¦ 8 eggs

¦ 250ml (1 cup) cream

¦ 15ml (1 tablespoon) sugar

¦ salt to taste

¦ 8 thick slices of bread


¦ 100g (1 cup) grated cheddar cheese

¦ 2 medium tomatoes, sliced

¦ 4 slices ham


To make the toast; whisk together eggs, cream,

sugar and salt in a large bowl.

Soak sliced bread in the egg mixture until

saturated but not falling apart, 1 to 2 minutes.

Preheat a heavy based non-stick frying pan over

medium heat. Cook the French toast on each side

until nice and brown.

Immediately sandwich two slices of toast with

sliced tomato, sliced ham and grated cheese.

(Do this while the toast is hot so that the cheese

can melt).

Slice sandwiches diagonally, wrap in tin foil and

pack in lunch box.
