Fried fish

Ingredients you will need

1½ cups self-raising flour

1 egg

1½ cups beer

5 fish fillets

Vegetable oil, for deep frying

Tartar sauce:

1 cup mayonnaise

2 teaspoons finely grated lemonrind

1 teaspoon lemon juice

2 teaspoons finely choppedgherkins

2 teaspoons drained capers,chopped finely

1 teaspoon finely chopped dill

1 teaspoon finely choppedchives

¼ cup cream

¼ cup sour cream

Move! Tip

To make sure that your oil is hot enough for frying, drop a square of bread into the oil. It should sizzleand turn brown and crisp within afew seconds. Fry one or two pieces of fish at a time – don’t overfill the pan. If you do, the oilwill become too cool, and there will not be enough room to turn the fish pieces over. To make the batter, whisk flour, egg and beer togetheruntil smooth. Cover andrefrigerate for 1 hour.


Heat oil in large saucepan,then dip fish in batter, and deep fry the pieces in hot oil until browned and crisp.Once cooked through and golden, remove the fish from the oil using a slotted spoonor spatula. Place the fish on absorbent kitchen paper.

Serve the fried fish with tartar sauce: simply mix all the ingredients well and use as a dipping sauce with your meal.   Serve with chips or rice, and a salad.
