Fruit Loaves: Banana Loaf

¦ 150g butter, softened

¦ 140g (2/3 cup) castor sugar

¦ 2 large eggs, beaten

¦ 140g (1 cup) self-raising flour

¦ 5ml (1 teaspoon) baking powder

¦ 125ml (½ cup) chopped peanuts

¦ 2 very ripe bananas, mashed


¦ 65g (½ cup) icing sugar

¦ 15ml (1 tablespoon) water

¦ 125ml (½ cup) dried banana chips, for decoration


Preheat oven to 1800 Celsius.

Grease and line a one-litre loaf tin.

Cream together butter and sugar until light and fluffy. Slowly add eggs, beating well after each addition.

Sift together flour and baking powder, and fold into creamed mixture. Add nuts and bananas, and mix well.

Pour the mixture into the loaf tin and bake for 30 minutes or until a skewer comes out clean. Cool in the tin for 10 minutes, and then turn out onto a wire rack.

For the frosting: Mix icing sugar with water to make a runny icing.

Drizzle the icing across the top of the cake and decorate with banana chips.

Move! Tip: Banana chips are available from most supermarkets, in the dried fruits and nuts section.
