Golden syrup dumplings

Serves 6


750 ml (3 cups) self-raising flour

3 ml (½ teaspoon) salt

10 ml (2 teaspoons) butter



750 ml (3 cups) boiling water

250 ml (1 cup) sugar

30 ml (2 tablespoons) golden syrup

Grated rind and juice of 1 lemon

Batter Mix the flour and salt. Rub the butter or margarine in with your fingertips until it looks like fine breadcrumbs. Add the milk and mix to form a stiff batter.

Syrup Heat the water, sugar, syrup, lemon rind and juice until boiling. Add tablespoonfuls (15 ml) of the batter to the boiling syrup. Cover and simmer or 20 minutes. Take out with a spoon and serve with evaporated milk or custard
