Greek style fish

¦ 10 baby potatoes, scrubbed and cut in half

¦ 1 onion, sliced

¦ 250g button mushrooms, halved

¦ 2 cloves garlic, crushed

¦ 5ml (½ teaspoon) dried oregano

¦ 30ml (2 tablespoon) olive oil

¦ salt and freshly ground black pepper to taste

¦ ½ lemon, cut into wedges

¦ 4 small tomatoes, cut into wedges

¦ 4 skinless hake fillets (about 400g)

¦ 65ml (¼ cup) micro herbs or chopped parsley


Heat oven to 200°C. Place potatoes, onion, mushrooms, garlic, oregano and olive oil into a roasting tin, season with salt and freshly ground black pepper, mix together with your hands to coat everything in the oil.

Roast for 30 minutes, turning vegetables constantly until cooked through.

Add lemon and tomatoes, roast for 10 minutes, top with the fish fillets and cook for 10 minutes more. Serve immediately garnished with micro herbs or chopped parsley.

Move Tip: You can use any Sassi (Southern African Sustainable Seafood Initiative) approved fish such as Snoek, Yellowtail or Dorado.
