Grilled mix peppers in lemon marinade

Serves 8

6 mixed sweet peppers (two green, two yellow and two red)

2 onions, cut into wedges

45 ml (3 tablespoons) oil

salt and pepper to taste


60 ml (4 tablespoons) lemon juice

1 garlic clove, crushed

10 ml (2 teaspoons) oil

5 ml (1 teaspoon) dried thyme

Preheat the oven grill. Cut the peppers, remove the seeds and slice into strips. Arrange the peppers and onion wedges on a baking tray. Sprinkle with oil and season with salt and pepper. Grill for 10-15 minutes, or until the edges start to turn black. Remove from the oven. Mix all the ingredients for the marinade together and pour into a bowl. Add the grilled sweet peppers and mix lightly to coat with the marinade. Leave to cool in the marinade. You can serve the peppers as is, or mix with cooked rice or couscous to stretch the salad and serve more people.
