How to bake the perfect mielie bread

¦ 125g butter or margarine

¦ 75g (1/3 cup) sugar

¦ 3 extra large eggs

¦ 240g (2 cups) white bread flour

¦ 15ml (3 tablespoons) baking


¦ 3ml (½ teaspoon) salt

¦ 80g (1/3 cup) mielie meal

¦ 1 can (410g) whole kernel corn,


¦ 125ml (½ cup) milk

¦ fresh herbs to garnish


Preheat oven to 180°C. Grease a 23cm loaf tin or a 25cm round baking tin. Cream butter and sugar. Add eggs, one at a time and beat until light and fluffy. Sift bread flour, baking powder and salt, add to the creamed mixture.

Add mielie meal, whole kernel corn and milk, mix well. Spoon mixture into a loaf tin, bake

in oven for 55 minutes. Turn out onto a wire rack to cool. You can also use fresh corn on the cob, remove corn from cob using a sharp knife.
