How to make the hottest peri-peri chicken

3 cloves of garlic Juice and zest of a lemon Juice of an orange. 60 ml olive oil 2 tsp sweet paprika 1/4 tsp black pepper 1/2 tsp chilli flakes (more if you like it spicy) 1 tsp dried oregano 1 kg Chicken pieces - skin on 1/2 tsp salt 1 tbsp chopped fresh parsley (to serve)


  1. Pre-heat the oven to 200°C/180°C fan forced/Gas mark 6.
  2. Place the garlic, lemon juice, orange juice and olive oil into a processor and give the mixture a whizz until you have a rough paste.
  3. Add the lemon zest, sweet paprika, black pepper, chilli flakes and oregano.
  4. Mix on a low setting until well combined.
  5. Pour the marinate into a plastic bowl or large ziplock bag.
  6. Add the chicken pieces and leave to marinate for at least an hour but overnight will give you a great flavour.
  7. Lay the chicken out in a baking dish, sprinkle over the salt and cook in the oven for 45 minutes.
  8. Carefully baste the chicken with the pan juices and served sprinkled with fresh parsley.
