Lemon chicken

Serves 6 to 8

Fresh lemons and a little seasoning add flavour to this dish. The skin from the lemons becomes soft when baked and you can eat it with the chicken.

2 ripe lemons

1,5kg chicken pieces

15ml (1 T) oil

10ml (2 t) salt or chicken spice

3ml (1/2 t) pepper

1 onion, cut into thin wedges

Slice one of the lemons into thin wedges. Squeeze the juice from the other lemon and set aside. Season the chicken pieces with the salt (or chicken spice) and pepper. Heat the oil in a pan and fry the chicken until golden brown. Arrange the thinly sliced lemon, onion wedges and chicken pieces in a greased ovenproof casserole. Cover with a tight-fitting lid and bake for 40 minutes. Remove the lid and bake for a further 20 to 30 minutes until the chicken is golden brown. Serve with rice and vegetables.
