Lentil bake

Serves 6

Lentils are a good and economical source of protein (needed to build a healthy and strong body). It is also easier to digest than meat. Use any fresh vegetables you have for this recipe, for example, carrots, corn, baby marrows and aubergines.

250 g (1/2 packet) brown lentils

salt to taste

500 ml (2 cups) vegetables of your choice, cleaned and cut into pieces

30 ml (2 tablespoons) margarine

3 eggs

250 ml (1 cup) milk

125 ml (1/2 cup) grated cheese

Soak the lentils overnight in water. Drain and cook in clean water until soft. Once it is cooked, season with salt. Heat a little water in a saucepan and cook the vegetables until just done. Drain and season with salt and pepper. Add the margarine and mix with the lentils. Whisk the eggs and milk, and pour over. Pour everything into the dish, sprinkle with grated cheese and bake for 30 minutes until set. Serve warm.
