Low-Fat Pasta and vegetable bake

Serves 6

15 ml (1 tablespoon) margarine

1 onion, chopped

3 ml (½ teaspoon) garlic

1 green pepper, chopped

1 can (410 g) tomatoes

1 packet (50 g) tomato purée

6 courgettes, chopped

100 g spinach, washed and chopped

500 ml (2 cups) cooked pasta

80 ml (1/3 cup) chunky cottage cheese

60 ml (4 tablespoons) breadcrumbs

Melt the margarine in a large saucepan and add the onion, garlic and green pepper. Stir in the canned tomatoes, tomato purée, courgettes and spinach. Cook for seven to 10 minutes. Add the cooked pasta and mix. Place the mixture in an ovenproof dish and sprinkle over the cottage cheese followed by the breadcrumbs. Place in the oven for 8-10 minutes.
