Maize meal battered hake

¦ 250ml (1 cup) cake wheat flour

¦ 250ml (1 cup) maize meal

¦ 5ml (1 teaspoon) cayenne pepper

¦ 30ml (2 tablespoons) sugar

¦ 500ml (2 cups) soda water

¦ 30ml (2 tablespoon) honey

¦ salt and freshly ground

black pepper

¦ Sunflower oil

¦ 5 X 500g each Hake steaks

¦ salt and black pepper

Tartar Sauce:

¦ 375ml (1½ cups) mayonnaise

¦ 30ml (2 tablespoons) chopped


¦ juice of ½ lemon

¦ 15ml (1 tablespoon) freshly

chopped parsley leaves

¦ pinch cayenne pepper

¦ salt and freshly ground black

pepper to taste


For the batter: In a large bowl, add flour, maize meal, cayenne and sugar and mix together.

Whisk in soda water and honey until well incorporated and free of lumps.

In a deep saucepan, heat oil.

Season hake with salt and pepper and dredge in batter.

Allow excess batter to drip off and place gently into the hot oil.

Fry for 8 – 10 minutes until golden and crisp.

Drain on paper towels.

Place hake on a large serving platter or individual places and serve with tartar sauce.

For the tarter sauce; mix all ingredients together in a bowl.
