Marinade for chicken

Serves 6


12 chicken pieces

100ml vinegar

100ml oil

1 tablespoon Worcestershire sauce

1 tablespoon finely chopped onion

1 garlic clove, crushed and chopped

1 teaspoon paprika

1 tablespoon smooth apricot jam

2 tablespoons tomato sauce

1 teaspoon mustard powder


Place all the marinade ingredients in a screw-top container. Secure the lid and shake until everything is mixed well. Place the chicken pieces in a non-reactive container with a lid and cover with the marinade. Cover the container and leave for at least four hours, or preferably overnight in the fridge.
