Muchicha and tomato relish

¦ 1 bunch muchicha or spinach

¦ 250ml (1 cup) frozen peas or

¦ 1 can (410g) garden peas, drained

¦ 4 tomatoes, grated

¦ 2 red onions, chopped

¦ 250ml (1 cup) coconut milk salt and cayenne pepper


Rinse muchicha or spinach thoroughly, chop roughly and place in a large saucepan, steam for 15 minutes. Add peas, tomatoes, onions and coconut milk. Season with salt and cayenne pepper. Simmer gently for 15 minutes. Serve over pap. Coconut milk is available from most

supermarkets. You can also use coconut cream if preferred.
