Ox liver and onions

¦ 750g ox liver, sliced

¦ salt and pepper to taste

¦ 45ml (3 tablespoons) oil

¦ 2 large onions, thinly sliced

¦ 150g streaky bacon, chopped

¦ 10ml (2 teaspoons)

barbecue spice


Season liver with salt and pepper.

Heat oil and fry liver in batches until brown and cooked through.

Remove from pan and keep warm.

In the same pan, fry onions until soft and caramelized (add a bit of oil if necessary).

Add bacon and fry for 10 minutes.

Season with barbecue spice.

To serve:

Arrange fried liver on a platter and top with fried onions and bacon.

Serve with pap.
