Pasta salad with tuna, lemon and peas

Serves 6

500 g pasta (shells, spirals or bows)

2 lemons

375 ml (1½ cups) frozen peas, defrosted

45 ml oil

2 cans of tuna, drained and flaked

250 ml (1 cup) mayonnaise

125 ml (½ cup) milk Salt and pepper to taste   Method

Cook the pasta according to the step-by-step instructions above. While the pasta is cooking, grate the rind off the lemons and squeeze out the juice. Set aside. When the pasta is nearly cooked, add the peas and simmer for about two minutes. Drain and mix with the lemon rind, lemon juice and oil. Leave to cool. Mix the mayonnaise, milk, salt and pepper together. Pour over the pasta. Add the tuna and stir through. Serve lukewarm or at room temperature.
