Peach Cobler

¦ 1 can (825g) peach halves, drained

¦ 5ml (1 teaspoon) vanilla essence

¦ 50g (¼ cup) brown sugar

¦ zest and juice of 1 orange

¦ 2.5cm fresh ginger, peeled and finely grated

For the cobbler topping:

¦ 120g (1 cup) self-raising flour

¦ 100g butter or margarine, chilled

¦ 50g (½ cup) castor sugar

¦ 125ml (½ cup) dessicated coconut

¦ 250ml (1 cup) water


Preheat oven to 180°C.

Slice the peaches in half, place in a bowl and mix together with vanilla essence, brown sugar, zest and juice of orange and ginger. Transfer into an ovenproof dish.

In a large bowl, rub together flour and butter, using your fingers, until it resemble fine breadcrumbs. Mix in sugar and coconut.

Add 2 tablespoons of water and mix everything together to form a soft dough. Place spoonfuls of dough on top of the peaches to cover completely.

Bake in oven for about 20 minutes, until bubbly and golden on top. Serve with whipped cream or custard.
