Pumpkin Pies



90g butter

90g caster sugar

3 egg yolks

180g flour

Vanilla essence


Mix together the sugar, eggyolks, butter and vanilla. Addflour and combine ingredients toform dough. Shape into a disc,and allow to rest in therefrigerator for an hour. Roll outon a floured surface, line pan(or cut out and line smallerpans). Keep refrigerated whilemaking the filling.



¾ butternut – baked in the ovenand puréed to make 1 cup

3 eggs

1 teaspoon vanilla essence

½ cup golden syrup

½ teaspoon ground cinnamon

½ teaspoon ground ginger

pinch salt

pinch nutmeg

1½ cups cream


Combine all filling ingredients,and pour into prepared crusts.Bake in a 180°C oven for 45minutes.
