Quick amazi loaf

Makes 1 loaf

4 x 250ml (4 cups) self-raising flour

1ml (1/4 teaspoon) salt

500ml (2 cups) amazi

30ml (2 tablespoons) honey

Mix the flour and salt, and make a well in the centre. Add the amazi and honey, and stir to mix. Spoon the dough into a greased loaf tin and bake for one hour at 180ºC or until cooked through. Serve lukewarm with butter and jam.
