Quick bean salad

Serves 6

Serve with braai meat.

250 ml (1 cup) dry sugar beans

4 ripe tomatoes cut into small cubes

3 hard-boiled eggs, chopped

60 ml (1/4 cup) oil

20 ml (4 teaspoons) vinegar

10 ml (2 teaspoons) salt Black pepper to taste   Method

Soak the beans in water overnight. Drain and put in a saucepan. Fill with clean water and bring to the boil. Simmer for one hour or until the beans are cooked. Drain and add the beans to the tomato cubes and chopped hard-boiled eggs. Mix the oil and vinegar together and pour over the bean mixture. Season with salt and pepper, mix lightly and serve. Keep in an airtight container in the refrigerator.
