Salami pasta salad



¦ 500g Fattis and Monis shell pasta ¦ 15ml (1 tablespoon) olive oil ¦ 20 pitted black olives ¦ 100g cherry tomatoes, halved ¦ 100g cheddar cheese, cubed ¦ 3 spring onions, sliced ¦ 100g Enterprise salami slices, quartered ¦ ½ red pepper, seeded and finely cubed

¦ 3ml ground nutmeg ¦ 50g fresh chives, chopped ¦ 250ml (1 cup) CROSSE & BLACKWELL HOT & SPICY MAYONNAISE ¦ salt and freshly ground black pepper


Cook pasta according to instructions on the packet. Drain and rinse with cold water. Drizzle with olive oil and set aside. In a large bowl, combine olives, tomatoes, cheddar cheese, spring onions, salami, red pepper, nutmeg and fresh chives. Pour in the mayonnaise and season with salt and pepper. Toss lightly and serve at room temperature or slightly chilled.

Add cubed chicken or canned tuna as a substitute for the salami.
