Samp lasagne


¦ 500ml (2 cups) samp

¦ 125ml (1 cup) cream

¦ 2 eggs

¦ 45ml (3 tablespoons) oil

¦ 1 onion, chopped

¦ 1 clove garlic, crushed

¦ 500g minced beef

¦ 10ml (2 teaspoons) dry

Italian herbs

¦ 1 sachet (400g) sundried

tomatoes pasta sauce

¦ salt and pepper to taste

¦ 200g (2 cups) grated

cheddar cheese


Preheat oven to 180°C.

Place samp in a bowl, beat cream and eggs together and add to samp, mix well.

Spread samp at the bottom of a medium size lasagne dish.

Sprinkle with half the cheese.

Heat oil and fry onion and garlic until soft, add mince and cook until browned.

Add pasta sauce and cook for 20 minutes until saucy.

Spoon mince over samp and top with remaining cheese.

Bake in oven for 20 minutes until golden and bubbly.

Serve with a salad or vegetables in season.

You can use any flavour of pasta sauce.
