savory muffins

Savoury muffins make a great breakfast , snack or packed lunch . Best served warm .


2 cups all purpose flour

3 eggs

1/2 finely chopped cup spinach

1 large chopped tomato

1 large chopped onion

1/2 cup grated cheddar cheese

1 chopped green pepper

1 tsp salt

1 tsp ground black pepper

1 tbsp baking powder

2 tbsp milk

1 tin sardines (optional)

1 tbsp oil (for greasing)


Pre-heat your oven to 180 °C .                                                                                                            Beat eggs and milk together and add vegetables , cheese and sardines then stir well.             Mix flour baking powder , salt and pepper well before mixing in the egg and vegetable mixture  .                                                                                                                                            Grease your muffin tray with the oil and pour your mixture in  and bake for 15-20 minutes or until firm.                                                                                                                            * tip: you can substitute the veggies , cheese and sardines with your left over seshebo and vegetables, try different combinations and create a recipe you and your family will love .
