Spicy potato salad

Serves 6

A much better option than potato salad with a mayonnaise dressing, if you want to cut down on fat.

1 kg potatoes, cut into cubes

5 ml (1 teaspoon) cumin

5 ml (1 teaspoon) dried chillies, crushed

1 clove garlic, crushed

30 ml (2 tablespoons) lemon juice

60 ml (1/4 cup) fresh parsley, chopped

Boil the potato cubes until just tender. Drain and rinse under cold water. Leave to cool. Heat a pan (without oil) and add the cumin, chillies and garlic, and heat until fragrant (just a few seconds). Add the potatoes, lemon juice and parsley and mix well.
