Spinach frittata

¦ 15ml (1 tablespoon) olive oil

¦ 1 large onion, finely sliced

¦ 1 clove garlic, crushed

¦ 300g cherry tomatoes

¦ 100g spinach leaves

¦ Small handful basil leaves

¦ 100g ricotta cheese

¦ 6 eggs, beaten

¦ Salt and pepper to taste


Heat oven to 180°C. Heat oil in a large non-stick frying pan and fry onion and garlic for 5 minutes until soft.

Add tomatoes and toss and fry for 1 minute to soften.

Remove from heat, add spinach leaves and basil, toss together to wilt a little. Transfer all the ingredients to a greased 30cm x 20cm rectangular baking tin.

Dot vegetables with small pieces of the ricotta.

Beat eggs well and season with salt and pepper, pour over vegetables and cheese. Cook in oven for 20-25 minutes until pale golden and set. Serve with salad.

Move Tip: You can use feta cheese instead. M
