Steamed date pudding

Serves 6.

Although it takes some time, it’s really easy to make old-fashioned steamed pudding. Just follow the step-by-step instructions.

30 ml (2 tablespoons) butter or margarine

250 ml (1 cup) sugar

250 ml (1 cup) boiling water

500 g dates, finely chopped

3 ml (½ teaspoon) salt

10 ml (2 teaspoons) bicarbonate of soda

625 ml (2½ cups) self-raising flour

Mix the butter or margarine, sugar and boiling water. Add the dates, salt and bicarbonate of soda, and leave to cool. When the mixture is at room temperature, stir it into the self-raising flour. Grease an ovenproof dish (one that fits into a saucepan) with butter or margarine, and pour the batter into the dish. Cover with foil and prick the top with a fork (see step-by-step). Put the dish into the saucepan, cover and steam for one and a half to two hours until cooked. Serve with custard.
