Steamed pudding

1. Grease a deep ovenproof bowl and fill three-quarters with the batter. Grease a piece of lunch wrap (wax paper) with butter and put it butter side down on the bowl.

2. Fold a clean tea towel and place it over the wax paper. Tie it around the neck of the bowl with string. Tie the ends of the tea towel on top.

3. Pour a little boiling water into a saucepan (large enough for the bowl to fit into it). Put a small wire rack or pot stand at the bottom for the bowl to stand on. The bowl shouldn’t touch the water.

4. Place the bowl with pudding batter on the wire rack or pot stand, cover the pot with a tight-fitting lid and bring to the boil.

5. Simmer (steam) for the required time, and add more boiling water to the pot when necessary.
