Stuffed mushrooms with blue cheese

¦ 6 large brown mushrooms, stalks removed and chopped

¦ 60g butter

¦ 2 sprigs fresh thyme, chopped

¦ 30ml (2 tablespoons) sunflower oil

¦ ½ onion, finely chopped

¦ 2 garlic cloves, crushed

¦ ½ red pepper, finely chopped

¦ 50g blue cheese or feta cheese

¦ 60g (½ cup) white breadcrumbs

¦ 60ml (4 tablespoons) micro herbs

¦ Salt and freshly ground black pepper


Preheat the oven to 200°C.

  • Arrange the mushrooms on a baking tray. Divide butter between the mushrooms. Season with salt and pepper and sprinkle with chopped thyme. Bake for 10 minutes.
  • Heat oil in a frying pan, fry onion and garlic until soft. Add the chopped mushroom stalks and red pepper, cook until softened. Spoon the mixture into the baked mushrooms. Put the blue cheese or feta on top and sprinkle bread crumbs all over.
  • Roast mushrooms for a further 6 minutes, or until the top is golden and bubbling.
  • Arrange mushrooms on a serving plate, sprinkle over the micro herbs and serve.
