Trotters stew

¦ 1kg pig trotters, cleaned

¦ water

¦ 45ml (3 tablespoons) oil

¦ 1 onion, chopped

¦ 10ml (2 teaspoons)

crushed garlic

¦ 15ml (1 tablespoon)

minced ginger

¦ 1 packet brown onion soup

¦ 500ml (2 cups) water

¦ 15ml (1 tablespoon)

barbecue spice

¦ salt to taste

¦ 5ml (1teaspoon)

cayenne pepper


Place trotters in a large saucepan and cover with water.

Bring to boil, turn down the heat and simmer gently for 1½ hours.

Constantly skim off the scum that comes to the top.

Remove trotters from stock and keep warm.

In another saucepan, heat oil and fry onion, garlic and ginger until soft.

Dissolve brown onion soup powder in 1 cup of water and pour into the

onion mixture.

Season with barbecue spice, salt and cayenne pepper to taste.

Add the trotters to sauce and pour the remaining cup of water.

Bring to boil, turn down heat and simmer for a further 30 minutes.

Serve over samp.
