Tshidi Vera cooks for mushrooms, leeks and bacon on salad greens for us

¦ 65ml (¼ cup) olive oil

¦ 65ml (¼ cup) sunflower oil

¦ 1 head of garlic, heads crushed not peeled

¦ Salt and freshly ground black pepper

¦ 500g packet of sliced mixed mushrooms (portabelini, button & brown mushrooms)

¦ 1 leek, thinly sliced

¦ 250g bacon, sliced

¦ 65ml (¼ cup) cider vinegar

¦ 1 packet mixed lettuce leaves

¦ 200g feta cheese

¦ Salt and freshly ground black pepper


In a small saucepan, bring both oils to a simmer with the garlic.

Cook until fragrant, 15 minutes. Strain oil and discard garlic.

In a large frying pan, heat the garlic oil, add mushrooms and fry until crisp and golden.

Remove and place in a bowl. Add bacon to pan fry until crisp, remove from pan and drain on a paper towel.

Add leeks to the pan, cook until softened. Add vinegar, simmer for about 5 minutes.

On a large plate or individual side plates, arrange lettuce leaves, mushrooms and leeks.

Sprinkle with bacon and feta cheese, season with salt and freshly ground black pepper
