Tuna salad with rice Soweto style

This recipe is by Lentswe Bhengu, as cooked on Kasi Kitchen

1                      tomato, blanched

5                      French green beans, blanched

1/2                   red pepper, seeded and diced

1                      green pepper, seeded and diced

1 cup               cooked Spekko Parboiled Long Grain Rice

1 can               tuna, drained or can use 3 or 4 anchovies

1/2 can            chickpeas, drained (optional)

1                      clove garlic, peeled and minced

1/3 cup            fresh parsley, chopped

1/2 cup            vinaigrette dressing (optional)

1                      hard cooked egg, cut in wedges (optional)

  1. In a pot add water and allow to boil, once boiling, drop in whole tomatoes for 10-20 seconds and remove. Peel off skin and cut into wedges.

  1. In the same pot blanch the green beans till tender.

  1. In a large bowl combine the rice, red and green peppers, tomato, beans, tuna/anchovy, chickpeas and garlic, and pour vinaigrette over.

  1. Cover and refrigerate until ready to serve, when ready garnish with hard cooked eggs, some fresh chives or coriander.
