Tuscan Tuna and bean salad

This salad is a quick nutritious meal on it's own

Serves 4 - 6


¦ 2 tablespoons smooth mustard

¦ 1¼cup olive oil

¦ 4 tablespoons white vinegar

¦ 2 tablespoons freshly chopped parsley

¦ salt and freshly ground black pepper to taste

¦ 1 red onion, chopped finely

¦ 2 tablespoons spring onions, chopped

¦ 1 celery stalk, chopped finely

¦ 1 red sweet pepper, white parts and seeds removed

and chopped into small chunks

¦ 2 x 400g tin four bean mix

¦ 2 x 170g tins tuna in oil


Mix the mustard, olive oil, vinegar, parsley, salt and pepper

and keep the dressing aside. Drain the tuna and beans and

mix with the rest of the ingredients in a large mixing bowl.

Pour the dressing over and mix well.

Move! Tip:: The salad is just as tasty without the onion.
