Vanilla biscuits

Makes 50 biscuits

These biscuits keep well and make a great gift for friends.

180 ml (3/4 cup) soft margarine

250 ml (1 cup) castor sugar

10 ml (2 teaspoons) vanilla essence

625 ml (2½ cups) cake flour, sifted

1 egg, beaten

Preheat the oven to 180°C and grease a couple of baking trays. Cream the margarine, sugar and vanilla essence together until light and fluffy. Add the flour and egg and mix to form a dough. Cover in cling wrap and leave the dough to rest for 30 minutes in the refrigerator. Roll out the dough on a floured surface. Cut into shaped with a cookie cutter. Bake for 10-15 minutes until pale golden brown. The biscuits will still be soft, but will harden when they cool. Leave to cool for a few minutes until hard enough to remove from the trays. Cool completely on wire racks. Ice with any frosting you prefer or just sift icing sugar over. Store in an airtight container.
