Quick holiday meal

THIS quick and easy microwave meal is bound to be enjoyed on a cold winter’s evening. The recipe is a variation on cottage pie and a favourite of herb expert, Marie Bowker.

Cottage pie

Serves 6


1 large onion

12,5 ml margarine

1 kg beef mince

50gram (100ml) cake flour

250 ml (1cup) beef stock, use a stock cube.

100ml tomato sauce

12,5 ml Worcestershire sauce

25 ml (1 Tablespoon) finely chopped parsley

5ml mixed dried herbs (if fresh herbs are used, add 5 medium basil leaves, chopped finely.)

Pinch of pepper

7ml salt


Use one of the following toppings instead of mashed potato.

Crust topping

Ingredients:125 ml milk

125 ml sunflower oil

1 egg

200ml cake flour

10 ml baking powder

Pinch of salt

50g(125ml) grated cheese



Beat the milk, sunflower oil, egg, cake flour, baking powder and salt to form a smooth batter. Pour the batter over the cooked mince meat mixture, sprinkle the cheese and paprika over.

Microwave the pie uncovered for 6 to 8 minutes on 100% power. To ensure that crust is cooked through test with cake skewer.

Leave the pie to stand for a few minutes before serving.

Mashed cauliflower topping

1 kg fresh cauliflower

125 ml water

2 ml salt

25gr margarine

50ml milk

125ml grated cheese



Cut cauliflower into pieces, wash and drain, place in a deep dish add the water and salt cover and microwave for 20 minutes on 100% power, stirring every 5 minutes.

Drain the cauliflower, mash well, add the margarine and milk and mix thoroughly.

Spread the mix over the cooked mince meat, sprinkle with cheese and paprika

Microwave uncovered on 100% for 5 minutes. Serve.
