Bowker’s, easy carrot salad.

Carrot mold

(makes 6 servings)


>> 375 ml (1½ cups) boiling water.
>> 1 packet (80 grams) pineapple jelly
>> 500 ml (2 cups) grated carrot. Method

Dissolve the jelly powder in the boiling water, stir well. While the jelly is cooling off a little. Grate the carrots.
Add the carrots to the jelly and mix.
Pour the mixture into a rinsed 750ml (3 cup) mold.
Chill until set.
Turn out carefully onto an attractive serving platter and garnish to taste.

Ring a change

2 Tablespoons of finely chopped fresh herbs may be added to the mix.
Suggested herbs:
basil, lavender and mint.
