Easy microwave scone tart

HERB and microwave cooking expert, Marie Bowker submitted this easy recipe­ ideal for lunch boxes. The tart can be made sweet or savoury and makes about 12 slices.
125ml (1/2 cup) white sugar
125ml (1/2 cup) cooking oil
2 large eggs
200 gram (1 1/2 cups) cake flour
10ml (2 teaspoons) baking powder
2 ml (1/2 teaspoon) salt
250ml (cup) milk
50 gram (1/2 cup) grated cheddar cheese.
50 gram (4 tablespoons) butter or margarine
5 ml (1 teaspoon Marmite or Bovril)
Spray microwave dish, approx 22cm in diametre, with cooking spray.
Beat the sugar, oil and eggs together
Sift the cake flour, baking powder and salt together and stir into the egg mixture. Add the milk and mix to a slack batter.
Pour batter into the pie dish.
Place the dish on an inverted saucer in the microwave oven.
Microwave uncovered on 100% power for 8 minutes.
Allow to stand for a few minutes then sprinkle the cheese over.
Mix the butter or margarine with the Bovril or Marmite, microwave in 2 cup dish for 40 seconds, until melted. Spoon the mixture over the cheese.
Microwave the tart uncovered at 100% power for about 2 minutes until the cheese melts.
Serve lukewarm.
For a herby taste add 6 finely chopped basil leaves to the batter mix.
To serve this as a sweet tart omit the savoury topping and drizzle honey over warm tart or spread over some of your favourite jam.
