IT was only five years ago that Greytown cheesemaker, MJ Mook started, what is now a highly successful cheese-making business.

MJ, who came to South Africa from Holland eight years ago missed the taste of good cheese, so decided to do something about it.

After several months of experimenting in the kitchen and consulting with Dutch cheesemakers, she started producing cheese which was soon in demand on the market and within a few months the market had expanded with production keeping pace.

The process starts with the highest quality whole milk obtained from a dairy farm in the area and traditional methods of the past are used for the boerenkaas (cheese that is manufactured on the farm).

Boerenkaas is always made from pure unpasteurised milk. This, together with the traditional manufacturing process, mainly by hand, makes the Just Cheese range natural, wholesome and unique.

MJ’s passion for cheese-making, a natural feel for cheese as well as spotless, hygienic and highly organised conditions, combine to produce an award-winning and tasty range of cheese.

To make sure the final product is the best, MJ “matures and pampers” the cheese in the cold room from six weeks to two years.

On Sunday 2 August Just Cheese will hold an open day at Just Wise Farm from 10am to 3pm to demonstrate cheese-making and tasting.
