Quick quiche

Ingredients:

1 large egg

1 1/2 tablespoons milk

1 teaspoon melted unsalted butter

pinch of salt and freshly ground black pepper

4 small tomatoes, halved (or half a tomato chopped)

1/8 cup torn pieces of fresh bread

1 tablespoon grated cheese

1 teaspoon chopped fresh herbs, plus more for garnish (green onions, Italian parsley, chives, etc.)

Method:

In a microwavable mug, add egg, milk, melted butter, salt, and pepper and whisk thoroughly. Add tomatoes, torn bread, grated cheese, and chopped herbs on top of egg mixture, making sure ingredients are evenly dispersed and have not settled at the bottom of mug.

Ingredients will stay settled within the quiche mixture better if you do not whisk ingredients into egg mixture.

Place mug in microwave, and cook on high for 1 minute, just until egg is completely cooked and quiche is slightly puffed.

Nutella brownie

1/2 cup and 2 tbsp Nutella

1 large egg, gently whisked

4 tbsp all purpose flour

Method:

The directions here are for making 2 mug cakes.

Split the whisked egg evenly into two oversized microwave safe mugs (approximately 2 tbsp of whisked egg per mug).

Add 1/4 cup and 1 tbsp of Nutella into each mug.

Add 2 tbsp of flour into each mug. Mix with a sturdy whisk until batter is smooth. Batter will be very thick, so you will need to exert some power in your whisking.

Microwave each mug separately for about 1 minute. Let brownie cool and set for about 15-30 minutes (which allows it to develop that chewy texture) before serving and eating.

Take out of mug to eat - sprinkle with powdered sugar, cream, ice cream, fruit or just enjoy as is. - Kirbie's Cravings.

Lemon zest cake

Ingredients:

3 tbsp flour

1/4 tsp baking powder

1 large egg

3 tbsp sugar

2 tbsp vegetable oil

1 tsp grated lemon zest 2 tsp lemon juice

1 tbsp icing sugar

Method:

Spray a mug with non-stick cooking spray. In a small bowl, combine dry ingredients until well mixed.

Using a fork, beat in egg, oil, lemon zest and lemon juice until well blended.

Pour into mug and microwave on high for 90 seconds.

Cool in mug and eat directly out of mug or remove carefully to a plate. Sprinkle icing sugar and lemon zest over top. - Life Love Liz
