‘Meat’ the local boerewors champion

THE wine industry has its wine masters, the cheese industry its cheese makers, the ba-kery industry its esteemed pastry, but the meat industry is known for its ‘boerewors’ kings

Humansdorp’s Ayanda Dyanse is one of them. Dyanse, a butcher at Shoprite Humansdorp, is an experienced boerewors ma-ker. His self-invented boerewors recipe has landed him a spot as one of the 18 finalists in the Shoprite Checkers Boerewors Competition.

Dyanse is considered to be among the best in the industry because of his training, skill and commitment. He started learning the fundamentals of the trade nine years ago when he joined Shoprite as a student sausage maker. “Before that, I knew nothing about boererwors,” says Dyanse.

Now, he has perfected grinding, seasoning, stuffing, linking and cutting meat perfectly.

“I feel privileged and honoured to be part of this esteemed competition, and to have made it this far,” says Dyanse.

According to him, he has perfected his winning beef boerewors over the past two years. “I do not use any special ingredients. The secret is in the perfect balance between the different spices.”

Next Satarday will see the top 18 battle it out in Cape Town for the crowning of the Championship Boerewors winner for 2015 and the grand prize of a Hilux 2.7 Double Cab Raised Body L45.

This year saw the format of the competition change.For the first time ever the public will vote for the winner during a Top 3 showdown. The South African Chefs Association (SACA), a recognised authority on food in South Africa, takes charge of the judging procedure and ensures that all entries adhere to the guidelines for making truly traditional boerewors.
