AS part of an exclusive Executive Chef search by The Mantis Group, two top chefs went head-to-head in a cook-off to prove that the proof of the pudding really is in the eating.

The two local chefs were tasked with creating a 4-course fine dining menu that showcased their talent and love for fusion cuisine. And in the end, it was Hankey resident Wayne Myburgh’s creative approach to food that won him the title of the new Executive Chef of the No5 by Mantis Hotel in Port Elizabeth.

Inspired by the colourful country of South Africa, a hint of nostalgia and a side of international influence, Wayne’s menu was an adventure for all the senses; an approach that Wayne has been finessing throughout the years.

Self-taught, Wayne is inspired by some of the most famous unschooled greats like Heston Blumenthal and Jamie Oliver. “I’m more of an instinctive chef, rather than following the rules about how it’s done,” he said.

Fuelled by the authentic South African cooking he grew up with, Wayne’s seasonal menus frequently feature dishes inspired by his adventurous spirit. He believes every dish should be a true reflection and celebration of fresh ingredients and finely tuned flavours.

In his new capacity, Wayne will showcase his knowledge of food with the best quality ingredients to express his talent and passion in order to create a unique dining experience that the No5 by Mantis guests have come to expect.

Wayne added, “I am so thrilled to be part of the No5 by Mantis team. The atmosphere in the kitchen is great and I’m looking forward to introducing some exciting menu changes.I also want to maximise the use of our exceptional local ingredients throughout the menus.”

We felt Wayne was the best chef to bring this vision to life. He told a story true to South Africa and executed that sensual journey so artistically.
