Half a chopped onion

15 ml oil

500 grams cubed chicken fillet

2 ml garlic

crushed green chilli to taste

5 ml salt

12 ml frozen corn/mixed vegetables

braise onion in oil until softened.

10 ml vinegar

10 ml flour

125 ml water

50 grams grated cheese

50 grams spaghetti

Spring roll sheets


• Add in the chicken and the spices and cook together.

• Then add in and stir fry the corn/mixed vegetables.

• In a separate pot mix together and bring to a boil the vinegar, flour, water and cheese.

• Mix well while it thickens.

• Combine the sauce, chicken mixture and cooked spaghetti together.

Leave to cool before filling spring rolls.


125 grams butter/margarine

125 ml caster sugar/sugar

1 large egg

2.5 ml strawberry essence

2.5 ml baking powder

125 ml corn flour

375 ml cake flour


Smooth strawberry jam, icing sugar

Strawberry Icing

30 grams butter

125 ml sifted icing sugar

2.5 ml milk

2.5 ml strawberry essence

Cream the butter/margarine and caster sugar/sugar.

Beat in the egg, strawberry essence and corn flour.

Add in the baking powder and form the dough with the flour.

• Roll the dough to 5 mm thickness.

• Cut using a Malaysian cutter of your choice that has an indent in the centre.

Bake the biscuits in a preheated oven at 1800 C for 15 minutes, until the biscuits are

lightly coloured and slightly firm.

Loosen the baked biscuits from the pan before it cools completely.

Cream the ingredients together until light and fluffy.

Sandwich two biscuits together with the icing.

Pipe the smooth strawberry jam in the centre of the indent on the biscuit.

Sift on icing sugar.

Using sugar instead of caster sugar gives the biscuit a grainy texture, so use sugar according to your preference. Any cutter of your choice can be used. A Malaysian cutter makes a pattern on the biscuit and comes in many different patterns.

For lemon creams, substitute the strawberry essence for lemon essence.
