• Three cups self-raising flour

• 1/2 cup sugar (add more if you like)

• 1/2 teaspoon salt

• One cup butter / good quality margarine

• One egg, beaten

• 3/4 cup milk

• One tsp vanilla essence


In a large bowl combine flour, sugar and salt. Rub in the butter.

Mix the egg, vanilla essence and milk in a small bowl and, using a fork, stir into the flour mixture until moistened. Knead the dough lightly (don’t overwork because it won’t rise and will be stodgy). Roll out dough and cut into desired shapes. Place on a lightly greased baking sheet and bake for 12 to 15 minutes in a preheated oven at 200°C, or until lightly browned to your liking.

Macerated Strawberries — Add two teaspoons sugar to 10 sliced strawberries. Cover and leave for 15 minutes. — Food24
