Crusty home-made pie with KOO curried mixed vegetables


• 1 packet (400 g) frozen puff pastry, thawed

• 50 g butter

• 1 egg, beaten

• 6 medium potatoes, peeled and diced

• Salt and freshly ground black pepper

• 1 can (410 g) KOO Mixed Vegetables in Cape Malay curry sauce

• 50 g (1 cup) grated cheddar cheese


1. Preheat oven to 180 degrees C. Line a baking sheet with baking paper.

2. Boil potatoes until done. Add butter to potatoes, season with salt and pepper, mash well until smooth.

3. Add KOO Mixed Vegetables in Cape Malay curry sauce and mix with mashed potatoes, add cheese, mix well.

4. Roll out pastry onto a lightly-floured working surface, using a rolling pin, roll the dough out slightly.

5. Spoon the vegetable mash onto one half of the pastry sheet, moisten the edges with water.

Fold the pastry over the vegetable filling and stick the edges together, pressing down with a fork to seal.

6. Brush top of pie with egg wash. Transfer pie onto baking sheet. Bake until pie is golden and flaky.
