VALERIE Smith of Cradock in the Eastern Cape, recently shared her recipe for springbok fillet in a red wine sauce with Express readers.

Springbok filet in red wine sauce


2 garlic cloves, crushed

250ml good quality red wine

1 twig rosemary, stripped

6 juniper berries, crushed

salt and black pepper

250ml oil


  • Combine the sauce ingredients and allow the fillet to marinate for two to three hours.
  • Heat your pan until very hot.
  • Fry the fillet until it is half cooked and remove it.
  • Mix 100g butter with the sauce in the pan and stir well.
  • Pour the sauce through a sieve.
  • Cut the fillet into medallions and pour over the sauce.
