Thekla Salmon from Observatory, also known as the Domestic Goddess, has collaborated with Stodels Nurseries to produce a series of “Cooking with herbs” themed demonstration videos.

They believe there is nothing quite as satisfying as growing and cooking your own vegetables and herbs. Freshly picked herbs from your garden pack so much flavour that they can help transform simple, everyday dishes into something delicious and nutritious, they say.

The aim of the collaboration is to inspire and show viewers how best to use their home-grown or shop-bought herbs to make delicious meals.

Salmon has always grown herbs and cooked with it every day. Over the years she has been shopping at Stodels for her plants, so when there was a discussion on sharing some tips on how to cook with herbs, she believes it was a natural fit for her.

The video series started with preparing aromatic herb salt and herb oil and showing how it can be used in basic dishes.

Last month there was the “one-pot wonder”, prepared in two different ways, as well as an Asian salmon salad.

Next they will be looking at summer soups and salads. Ahead of the festive season she will share a mouth-watering roast lamb dish.

The Domestic Goddess says she is excited about being able to inspire people to get into their kitchen and use fresh produce to prepare a delectable, quick meal that looks and tastes fantastic. “I like fresh, simple food, bursting with natural flavour, colour and texture which doesn’t take an age to prepare. People are embracing good quality, ethically produced food, celebrated for its natural goodness,” she says.

According to her the video series is a step in achieving her dream to reach, teach and inspire as many people as possible to use healthy cooking principles.

“Cooking shows and videos are the best way to achieve this aim, so I’d love to host my own cooking show one day,” she says.

Her journey as a cook started when two friends, who are busy career women and had just had babies, told her they didn’t have the time or energy to cook.

“This sparked an idea for me to train people to cook. It started with me giving them a tandem birthday gift by teaching their nannies how to cook healthy family meals.

“This has grown into teaching individuals, catering for special occasions, some private chef work and hosting cooking demonstrations at functions and parties.
