Chefs cook up a hat-trick

CHEFS at Mbango Valley Retirement Village have once again made Port Shepstone proud after winning the Kwazulu-Natal round of a culinary competition for the third year in a row.

The competition was held in Durban.

Feedem Pitseng, is an independent catering company which hosts a culinary competition throughout the company to express and showcase employee’s talents and skills in catering.

The company manages the kitchen at Mbango Valley.

“We competed against six teams and the theme was high tea. It wasn’t only about cooking skills, but the presentation of the meals too,” said senior chef, Sanjeev Sewnarayan.

Teams had to prepare seven dishes comprising a cold beverage, two traditional items, two items of your own choice, two items using the following techniques - puff pastry, choux pastry, and sugar work, chocolate tempering, ice-cream making and petit fours.

The Mbango team made a berry frappe, served with fresh cream mint, garnished with mint and straw, as their beverage.

Traditional or cultural item comprised a pineapple and carrot cake served with sour cream cheese and candied carrot shavings and authentic spiced chicken meat-ball lollipops served with a shot of burnt lemon aioli.

They chose crispy seared duck served on a bed of marinated red cabbage mix with a dollop of tangy tomato raisin chutney and beetroot sprouts and goat cheesecake with chunky beetroot compote as their own dishes.

“We also whipped up ginger pecan lemon tarts with fresh cream, candied lemon zest and white mint chocolate shards and nutty choc cookie dough truffles with pistachio brittle and English cream,” said Sewnarayan.

The team inspiration from the various places they visited said Sewnarayan.

“Each team member gave ideas on their favourite food items that we moulded and personalised to fit the categories,” said Sewnarayan.

Mbango will now compete in the national round in Cape Town at Leopards Leap Wine Estate in Franschoek on 18 August
