• 125 g SPAR margarine

• 125 ml SPAR white or brown sugar

• 2 ml almond essence

• 250 g bar pitted dates

• 150 g dried fruit cake mix • 1 packet SPAR coconut tea biscuits, crushed

• Gently heat the margarine, sugar and essence together in a heavy-based saucepan. Add both dried fruits and stir over me- dium heat until thick and sticky.

• Stir in the coconut biscuits thoroughly. Turn the mixture onto a cleaned worktop and shape the mixture into 3 x 3 - 4 cm diameter rolls. Roll each one in coconut until evenly coated. Wrap each roll firmly in foil and refrigerate for at least 1 hour.

• Cut off 1cm slices.

Makes 36 slices.

Hints and tips

Crush the biscuits in your hands, not in a processor or with a rolling pin. The idea is retain texture and not reduce them to crumbs. Instead of round slices, make squares by pressing the warm mixture into a SPAR Good Living non-stick Swiss-roll pan. When firm, cut into squares before coating with coconut.
